Bison Burgers with Bacon Jam
This Kelsey Murphy-inspired bison burger recipe is packed with bold flavors, thanks to Musket Powder Black Label and Red Label seasonings. Topped with a rich bacon jam, crispy jalapeños, and melted pepper jack cheese, this burger is a flavor explosion that’s perfect for any meal.
Ingredients:
- Bacon
- Red onion, chopped
- Garlic, minced
- Bison meat
- Musket Powder Black Label seasoning (Original Seasoning)
- Musket Powder Red Label seasoning (Cajun seasoning)
- Lettuce
- Pickles
- Crispy jalapeños
- Pepper jack cheese
- Apple cider vinegar
- Brown sugar
- Maple syrup

Instructions:

Render the Bacon Fat:
- Chop the bacon and place it in a pan over low to medium heat. Allow the fat to render out slowly.

- Once the bacon fat is rendered, add chopped red onion and minced garlic to the pan. Sauté until soft and aromatic.
- Sprinkle in salt and pepper, followed by brown sugar, Big Horn Bison Wildflower Honey, apple cider vinegar, maple syrup, and a generous dash of Musket Powder Red Label seasoning. Stir everything together and let it simmer until the mixture caramelizes and thickens into a jam. Remove from heat and set aside to cool—it will solidify slightly as it cools.

- Form the bison meat into balls, then flatten them into patties.
