DUCK BREAST OVER LIVE FIRE



Ingredients:
2 duck breasts Maple Leaf Farms
Musket Powder Cajun Blend (for the skin side)
Musket Powder Ranch Blend (for the meat side)
Kerry Gold Herb Butter (for griddle oiling)
Big Horn Honey (for topping)

Instructions:
1. Prep the Duck:
Score the duck breast skin in a crisscross pattern about 1/8th of an inch deep. This will help the fat render out during cooking.
2. Season:
Season the skin side with Musket Powder Cajun Blend for a nice kick, and then flip and season the meat side with Musket Powder Ranch Blend for a savory contrast.
3. Cook on the Can Cooker Gravity Grill:
Heat your griddle over the live fire and oil it with Kerry Gold Herb Butter. Let the butter melt and sizzle before placing the duck breasts skin-side down on the griddle.
4. Sear:
Sear the duck breasts for 6-8 minutes on the skin side, allowing the fat to render and the skin to get crispy. Flip and cook the meat side for 4-5 minutes or until the internal temperature reaches about 130°F for medium-rare.
5. Finish and Serve:
Once the duck is cooked to your liking, remove it from the heat and drizzle Big Horn Bison Wildflower Pasteurized Honey on top for a perfect sweet finish.
6. Rest and Slice:
Let the duck rest for 5 minutes before slicing and serving
